Ajwain Vegetable Comfort Khichda

Coarse bulgur slowly softens into a rich comforting texture, while ajwain adds warmth and digestive balance.

Ingredients:

  • Coarse bulgur – 1½ cups

  • Moong dal – ½ cup

  • Desi ghee – 2 tbsp

  • Farmili Ajwain – ½ tsp

  • Onion – 1, chopped

  • Ginger – 1 tsp, grated

  • Garlic cloves – 3, minced

  • Carrot – 1, diced

  • Green peas – ½ cup

  • Turmeric – ¼ tsp

  • Black pepper – ½ tsp

  • Salt – to taste

  • Warm water – as needed

  • Fresh coriander – for garnish

  • Homemade curd – for serving

Method:

  • Wash the coarse bulgur and moong dal together.

  • Heat desi ghee in a heavy pot and add Farmili Ajwain.

  • Add onions, ginger, and garlic and sauté gently until softened.

  • Add carrots, peas, turmeric, black pepper, and salt.

  • Add the bulgur and moong dal mixture and stir gently.

  • Pour warm water and cook covered on low heat until soft and creamy.

  • Stir occasionally to prevent sticking.

  • Garnish with fresh coriander and serve warm with homemade curd.
