Farmili Herbed Stuffed Peppers

Extra coarse bulgur keeps its texture beautifully during baking, making it ideal for stuffed vegetables and hearty baked dishes.
Ingredients:
Extra coarse bulgur – 1½ cups
Bell peppers – 4 large
Farmili Low Pungency Yellow Mustard Oil – 1 tbsp
Onion – 1, finely chopped
Garlic cloves – 4, minced
Tomato – 2, chopped
Mushroom – 1 cup, finely chopped
Spinach – 1 cup, chopped
Fresh parsley – ¼ cup, chopped
Black pepper – ½ tsp
Roasted cumin powder – ½ tsp
Salt – to taste
Warm vegetable stock or water – as needed
Hung curd – optional for serving
Method:
Cut the tops off the bell peppers and remove the seeds.
Heat Farmili Low Pungency Yellow Mustard Oil in a pan and cook onions until softened.
Add garlic, tomatoes, mushrooms, and spinach and cook gently until the vegetables soften.
Add extra coarse bulgur, cumin, black pepper, and salt.
Pour a little warm stock or water and cook partially until the bulgur absorbs some moisture.
Mix in fresh parsley.
Fill the peppers with the bulgur mixture and place them upright in a baking dish.
Add a little water to the base of the dish and bake covered until the peppers become tender.
Serve warm with hung curd if desired.
