Lemon Herb Bulgur Bowl

Medium bulgur cooks quickly while still holding a gentle bite, making it perfect for warm grain bowls, light pilafs, and everyday Mediterranean meals.
Ingredients:
Medium bulgur – 2 cups
Farmili Low Pungency Yellow Mustard Oil – 2 tbsp
Garlic cloves – 3, minced
Onion – 1 small, finely chopped
Zucchini – 1 small, diced
Yellow bell pepper – 1, diced
Cooked corn – ½ cup
Lemon zest – 1 tsp
Lemon juice – 2 tbsp
Fresh parsley – ½ cup, chopped
Fresh mint – ¼ cup, chopped
Farmili Saunf – ¼ tsp, lightly crushed (optional)
Black pepper – ½ tsp
Roasted cumin powder – ½ tsp
Salt – to taste
Warm water or vegetable stock – 3 cups
Crumbled feta or hung curd – optional for serving
Method:
Heat Farmili Low Pungency Yellow Mustard Oil in a wide pan. Add onions and cook until softened.
Add garlic, zucchini, and bell peppers. Cook gently until lightly tender but still vibrant.
Add medium bulgur and stir for a minute so the grains absorb the flavours.
Pour in warm water or stock and season with salt, cumin, black pepper, and optional lightly crushed saunf.
Cover and cook on low heat for 10–12 minutes until fluffy.
Turn off the heat and let the bulgur rest covered for 5 minutes.
Fluff gently with a fork and mix in lemon zest, lemon juice, parsley, mint, and cooked corn.
Serve warm with crumbled feta or a spoon of hung curd if desired.
