Smoky White Matar & Rice Pot

Farmili White Matar becomes soft and creamy after slow cooking, while aged basmati rice keeps the dish fragrant and light.

Ingredients:

  • Farmili White Matar – 1 cup, soaked overnight

  • Farmili Basmati Rice – 1½ cups

  • Farmili Medium Pungency Mustard Oil – 1½ tbsp

  • Onion – 2, sliced

  • Garlic cloves – 5, sliced

  • Ginger – 1 tsp, grated

  • Tomato – 2, chopped

  • Carrot – 1, diced

  • Roasted cumin powder – 1 tsp

  • Black pepper – ½ tsp

  • Turmeric – ¼ tsp

  • Salt – to taste

  • Warm water – as needed

  • Fresh coriander – for garnish

  • Lemon wedges – for serving

Method:

  • Heat Farmili Medium Pungency Mustard Oil in a heavy pot and cook the onions until lightly golden.

  • Add garlic and ginger and sauté until aromatic.

  • Add tomatoes and cook gently until softened.

  • Add soaked Farmili White Matar, carrot, cumin, turmeric, black pepper, and salt.

  • Pour enough warm water to cover the matar and cook until nearly tender.

  • Add washed Farmili Basmati Rice and mix gently.

  • Add more warm water if needed and cook covered on low heat until the rice becomes soft and fluffy.

  • Let the pot rest covered for 10 minutes before serving.

  • Garnish with fresh coriander and serve warm with lemon wedges.
