From Seed Selection to Bottle: How Farmili Produces Mustard Oil
Most consumers see only the final product sitting on a kitchen shelf. What they don't see are the months of decisions that shape the quality of that oil long before it reaches the bottle.
At Farmili, we believe those decisions matter.
That's why our approach to mustard oil starts not in a factory, but in the field.
Step 1: Choosing the Right Mustard Seed
The quality of any crop is heavily influenced by the seed from which it grows.
While many discussions about mustard oil focus on extraction methods, we believe the story starts much earlier. The characteristics of the oil are largely determined by the mustard variety planted in the soil.
Farmili grows mustard from carefully selected low-erucic-acid seed varieties. We believe quality begins with the seed, which is why our decisions start months before oil extraction ever takes place.
For us, quality starts at the source.
Step 2: Growing the Crop with Care
A seed can only reach its potential when supported by healthy growing conditions.
Our mustard is cultivated on family-managed farmland in Panipat, Haryana, where generations of agricultural experience continue to guide daily farming decisions.
Mustard is a winter crop, and every season brings its own challenges. Some years bring ideal weather. Others require farmers to adapt to changing conditions. Farming teaches patience because no two harvests are ever exactly the same.
Throughout the growing season, attention is given to soil health, crop management, and responsible agricultural practices. Every decision made in the field ultimately influences the quality of the harvest.
A Crop We Know Personally
It began with farmland.
For generations, our family has been connected to agriculture in Panipat, Haryana. Growing mustard is not a new experiment for us. It is a crop we understand through experience and careful observation.
That connection influences how we think about food.
When you grow a crop yourself, you pay attention to details that are easy to overlook. Seed quality. Soil condition. Weather patterns. Harvest timing.
Those decisions shape the final product long before it reaches the bottle.
Step 3: Harvesting at the Right Time
Harvest timing plays an important role in maintaining seed quality.
If harvested too early, seeds may not have fully matured. If harvested too late, losses can occur due to shattering or weather exposure.
The goal is simple: harvest when the crop has reached optimal maturity.
Once harvested, the mustard seeds are cleaned and prepared for the next stage of the journey.
At this point, what began as a field of yellow flowers starts its transformation into mustard oil.
Step 4: Cleaning and Sorting
Before oil extraction begins, the seeds undergo cleaning and sorting.
Dust, foreign particles, damaged seeds, and unwanted material are removed to help ensure consistency and quality.
While this step often receives little attention, it forms an important foundation for the final product.
Good oil begins with good raw material.
Step 5: Cold Pressing the Oil
The cleaned mustard seeds are then cold pressed to extract their oil.
Cold pressing is valued because it allows oil to be extracted mechanically without the intensive refining processes often used in highly processed oils.
The result is mustard oil that retains its natural character, colour, aroma, and flavour.
For generations, mustard oil has been appreciated not only for its culinary performance but also for its distinctive identity. Cold pressing helps preserve those qualities.
Step 6: Natural Settling and Filtration
Freshly pressed mustard oil contains tiny suspended particles that are naturally present after extraction.
Rather than relying on aggressive processing, the oil is allowed to settle before undergoing filtration.
This step helps improve clarity while preserving the character of the oil.
The objective is not to create a heavily processed product, but to produce oil that remains close to its natural form.
Step 7: Quality Evaluation
At Farmili, quality is not assumed.
It is verified.
We evaluate the oil for consistency, purity, and composition because quality should be verified, not assumed.
Our focus on low-erucic-acid mustard varieties begins at the seed level, but it does not end there. Maintaining transparency throughout production remains an important part of our process.
Consumers deserve to know what they are buying and where it comes from.
Step 8: Bottling with Care
Once the oil has completed processing and quality evaluation, it is bottled and prepared for distribution.
By this stage, the journey that began months earlier in a mustard field is nearly complete.
What reaches the shelf is only the final chapter of a story that began with seed selection, cultivation, harvesting, pressing, and careful quality checks.
Every stage contributes to the final product.
More Than Just Mustard Oil
At Farmili, we don't see mustard oil as a commodity.
We see it as the result of a chain of choices.
- The variety of seed chosen.
- The way the crop is grown.
- The care taken during harvesting.
- The method of extraction.
- The commitment to transparency.
These are details that rarely appear on a label, yet they influence the quality of the oil consumers bring into their homes.
The Farmili Philosophy
Food should not be a mystery.
People deserve to understand where it comes from, how it is produced, and why certain choices are made along the way.
That philosophy guides everything we do at Farmili.
From carefully selected low-erucic-acid mustard seed varieties to the final bottle, our goal is simple: to create food products with honesty, transparency, and respect for both tradition and modern agricultural knowledge.
Every bottle tells a story.
A story of seed selection, cultivation, harvest, and careful processing.
At Farmili, we believe consumers deserve to know that story.
Because the quality of an oil is shaped long before it reaches the kitchen.
It begins in the field.
