Ajwain Vegetable Comfort Khichda

Coarse bulgur slowly softens into a rich comforting texture, while ajwain adds warmth and digestive balance.
Ingredients:
Coarse bulgur – 1½ cups
Moong dal – ½ cup
Desi ghee – 2 tbsp
Farmili Ajwain – ½ tsp
Onion – 1, chopped
Ginger – 1 tsp, grated
Garlic cloves – 3, minced
Carrot – 1, diced
Green peas – ½ cup
Turmeric – ¼ tsp
Black pepper – ½ tsp
Salt – to taste
Warm water – as needed
Fresh coriander – for garnish
Homemade curd – for serving
Method:
Wash the coarse bulgur and moong dal together.
Heat desi ghee in a heavy pot and add Farmili Ajwain.
Add onions, ginger, and garlic and sauté gently until softened.
Add carrots, peas, turmeric, black pepper, and salt.
Add the bulgur and moong dal mixture and stir gently.
Pour warm water and cook covered on low heat until soft and creamy.
Stir occasionally to prevent sticking.
Garnish with fresh coriander and serve warm with homemade curd.
