Mustard Oil Roasted Vegetable Rice Bowl

Low pungency mustard oil works beautifully with roasted vegetables because it adds warmth without overpowering freshness.
Ingredients:
Farmili Basmati Rice – 2 cups
Farmili Low Pungency Yellow Mustard Oil – 2 tbsp
Broccoli – 1 cup florets
Carrot – 1, sliced
Pumpkin – 1 cup, cubed
Zucchini – 1 small, sliced
Garlic cloves – 4, sliced
Farmili Saunf – ¼ tsp, lightly crushed
Black pepper – ½ tsp
Roasted cumin powder – ½ tsp
Salt – to taste
Lemon juice – 1 tbsp
Hung curd – optional for serving
Fresh mint – for garnish
Method:
Cook Farmili Basmati Rice until fluffy and keep aside.
Toss all vegetables with Farmili Low Pungency Yellow Mustard Oil, salt, black pepper, cumin, and lightly crushed saunf.
Spread the vegetables on a tray and roast until lightly caramelized.
Warm the rice gently and layer it into serving bowls.
Top with roasted vegetables and drizzle with lemon juice.
Garnish with fresh mint and serve with hung curd if desired.
