Savory Farmili Bansi Suji Bowl

Bansi suji develops a soft yet grainy texture after roasting, making it ideal for wholesome Indian breakfast bowls and savory comfort meals.

Ingredients:

  • Bansi suji – 2 cups

  • Desi ghee – 2 tbsp

  • Curry leaves – 10–12

  • Green chilli – 1, finely chopped

  • Ginger – 1 tsp, grated

  • Farmili Ajwain – ¼ tsp

  • Onion – 1 medium, finely chopped

  • Carrot – 1 small, diced

  • Green peas – ½ cup

  • Capsicum – ½ cup, diced

  • Salt – to taste

  • Warm water – 4 cups

  • Lemon juice – 1 tbsp

  • Fresh coriander – for garnish

  • Roasted peanuts or cashews – optional

Method:

  • Heat desi ghee in a wide pan and roast the bansi suji gently until lightly aromatic. Remove and keep aside.

  • In the same pan, add curry leaves, green chilli, ginger, and Farmili Ajwain.

  • Add onions and cook until softened.

  • Add carrots, peas, and capsicum. Cook for a few minutes until slightly tender.

  • Pour in warm water and season with salt.

  • Once the water begins to simmer, slowly add the roasted bansi suji while stirring continuously.

  • Cook on low heat until soft and fluffy.

  • Finish with lemon juice and fresh coriander.

  • Serve warm with roasted peanuts or cashews on top if desired.
