Smoky White Matar & Rice Pot

Farmili White Matar becomes soft and creamy after slow cooking, while aged basmati rice keeps the dish fragrant and light.
Ingredients:
Farmili White Matar – 1 cup, soaked overnight
Farmili Basmati Rice – 1½ cups
Farmili Medium Pungency Mustard Oil – 1½ tbsp
Onion – 2, sliced
Garlic cloves – 5, sliced
Ginger – 1 tsp, grated
Tomato – 2, chopped
Carrot – 1, diced
Roasted cumin powder – 1 tsp
Black pepper – ½ tsp
Turmeric – ¼ tsp
Salt – to taste
Warm water – as needed
Fresh coriander – for garnish
Lemon wedges – for serving
Method:
Heat Farmili Medium Pungency Mustard Oil in a heavy pot and cook the onions until lightly golden.
Add garlic and ginger and sauté until aromatic.
Add tomatoes and cook gently until softened.
Add soaked Farmili White Matar, carrot, cumin, turmeric, black pepper, and salt.
Pour enough warm water to cover the matar and cook until nearly tender.
Add washed Farmili Basmati Rice and mix gently.
Add more warm water if needed and cook covered on low heat until the rice becomes soft and fluffy.
Let the pot rest covered for 10 minutes before serving.
Garnish with fresh coriander and serve warm with lemon wedges.
