Turkish Bulgur Pilaf

Coarse bulgur holds its shape beautifully while becoming soft and fluffy after cooking, making it ideal for hearty pilafs and one-pot comfort meals.

Ingredients:

  • Coarse bulgur wheat – 2 cups

  • Onion – 2, diced

  • Garlic cloves – 4, sliced

  • Desi ghee – 2 tbsp

  • Butter – 1 tbsp

  • Tomato paste – 2 tbsp

  • Carrot – 1 small, grated

  • Cooked chickpeas – 1 cup

  • Dried mint – 1 tbsp

  • Black pepper – 1 tsp

  • Red chilli powder – 1 tsp (optional)

  • Salt – to taste

  • Warm water – as needed

  • Thick yogurt or hung curd – for serving

  • Fresh coriander – for garnish

  • Lemon wedges – for serving

Method:

  • Heat ghee and butter in a wide pan. Once the butter melts and lightly browns, add the diced onions and cook until softened.

  • Add sliced garlic and sauté for a few minutes until fragrant.

  • Add tomato paste and stir continuously so the paste cooks evenly and blends into the onions.

  • Add the coarse bulgur directly into the pan and mix gently so the grains absorb the flavours.

  • Add grated carrot and cooked chickpeas. Stir well.

  • Add dried mint, black pepper, red chilli powder (if using), and salt. Let the herbs warm through for a minute.

  • Pour warm water into the pan until it sits roughly one finger above the bulgur mixture.

  • Add 1 teaspoon butter on top and bring to a gentle simmer.

  • Reduce to the lowest heat and cook for 10–15 minutes until the bulgur absorbs most of the water and becomes soft and fluffy.

  • Turn off the heat. Cover the pan with a clean cloth and place the lid on top. Let the pilaf rest for 10 minutes before serving.

  • Serve warm with thick yogurt or hung curd, fresh coriander, lemon wedges, and lettuce on the side.
