Turkish Kisir

Fresh, zesty salad that feels light yet deeply satisfying

Fine bulgur absorbs flavours quickly and creates the soft, fluffy texture that makes Kisir light, fresh, and beautifully cohesive.

 Ingredients:

  • Fine bulgur – 2 cups

  • Hot water – 1½ cups

  • Onion – 1 small, finely diced

  • Garlic cloves – 2, minced

  • Desi cow ghee – 3 tbsp

  • Tomato paste – 1½ tbsp

  • Red pepper paste – 1 tbsp (optional)

  • Fresh parsley – 1 cup, finely chopped

  • Fresh mint – ¼ cup, finely chopped

  • Spring onions – 3, finely sliced

  • Tomato – 1 medium, finely diced

  • Cucumber – 1 small, finely diced

  • Lemon juice – 3 tbsp

  • Pomegranate molasses – 1 tbsp (optional)

  • Roasted cumin powder – ½ tsp

  • Black pepper – ½ tsp

  • Red chilli flakes – ½ tsp

  • Salt – to taste

  • Lettuce leaves – for serving

  • Lemon wedges – for serving

 Method:

  • Place the fine bulgur in a large wide bowl. Pour hot water over it and cover with a lid or plate. Let it rest for 10–12 minutes until soft and fluffy.

  • Meanwhile, heat desi cow ghee in a small pan. Add onions and cook gently until softened.

  • Add garlic, tomato paste, and red pepper paste (if using). Stir for a few minutes until the mixture becomes rich and aromatic.

  • Add this warm mixture directly into the softened bulgur and gently fluff everything together using a fork.

  • Add parsley, mint, spring onions, tomato, and cucumber. Mix lightly so the salad stays fresh and airy.

  • Pour in lemon juice and pomegranate molasses. Season with cumin, black pepper, chilli flakes, and salt.

  • Mix gently until the herbs and dressing are evenly distributed.

  • Let the Kisir rest for 10 minutes before serving so the flavours settle into the bulgur.

  • Serve fresh with crisp lettuce leaves and lemon wedges on the side.
